Shady Knoll Rye Whiskey is double distilled on the grain in the distillery's alembic Charentais pot still in order to enhance its flavor and proof. They then age it for at least four years in new charred American oak barrels and then finish it for several additional months in premium used Portuguese Port barrels.
The nose and taste of Shady Knoll Rye Whiskey reflects the terroir and spice of their homegrown rye, the multiple flavors from the charred oak barrels and the rich smoothness of their Port barrels.
